Once the grapes have been crushed and pressed in winemaking, the remaining fruit, stalks, and seeds of the harvest are known as "pomace." Discarded Spirits Co. distilled this grape waste to form the base for its Chardonnay Vodka. The additional taste compliment comes from the wine industry. When dealcoholizing wine, there are two end products, the “non-alcoholic wine” and the “wine alcohol” separated from the wine. This "wine alcohol" is usually resold or even destroyed. The final vodka is clean but with a typically smooth, zesty Chardonnay finish.
